Breakfast is so much more than a piece of toast as you run out the door on your way to work. It’s a boozy Sunday brunch with your friends, a bowl of cereal at midnight because you can’t sleep, the perfect hangover cure smothered in sausage gravy and a lazy Saturday morning in bed with someone you love. Plus, “there isn’t a sadness in the world that can’t be cured by breakfast food.”

Breakfast is simply the best.

Whether you like your breakfast savory or sweet, no time is too early for a delicious treat! So why not eat ice cream for breakfast? Yup. You heard me right. I said ice cream for breakfast! February 6th is Eat Ice Cream For Breakfast Day! I’m celebrating this year with a yummy recipe that is guaranteed to sweeten your morning moments for better memories in 2021. I have three words for you… ice cream pancakes.
Sound like everything your childhood dreams were made of? That’s because they are!

Think all the fluffy goodness of made from scratch pancakes that are extra creamy and pack a huge flavor thanks to Hudsonville’s Limited Edition Cinnamon French Toast ice cream. It’s a chef’s kiss.

So grab your favorite jammies and let’s get to it! Today we’re making 3 Ingredient Ice Cream Pancakes!
Here’s what you’ll need.

- 4 Cups of Pancake Mix (Either boxed or homemade.)
- 2 Cups of Milk (You add this as needed, you may need a little more!)
- 3 Cups – 6 Cups (24 oz – 48 oz) of Your Favorite Hudsonville Ice Cream Flavor (I’m using their Limited Edition Cinnamon French Toast, but I’ve made these with Creamery Vanilla, Belgin Cookie Butter, French Vanilla and all were incredible!)
Directions
Begin by melting your ice cream! I know, it feels SO wrong to melt an entire container of perfectly good ice cream, but trust me, it will be worth it in the end. I take the top off of my ice cream and melt it at 30 second intervals, stirring in between.

While ice cream is melting, mix up your pancake mix or grab your favorite boxed brand. If you want to make your own it’s simply a mix of flour (4 cups), sugar (½ cup), baking powder (8 teaspoons), baking soda (½ teaspoon) and salt (1 teaspoon)! Add 4 cups of mix to a mixing bowl.
Once your ice cream is completely melted, begin to slowly add to your pancake mix. I tend to cook without measurements and just eyeball it. But, if you like measurements, I would add 1 cup of ice cream in at a time. For every two cups of ice cream you add, add a half a cup of milk! Keep adding ice cream and milk and stirring. Your batter should be slightly lumpy (that’s what makes your pancakes fluffy) and should pour easily but not be runny.
Now, turn on your griddle to about 275. (This is a much lower temperature than what you would cook normal pancakes at! You don’t want them to cook too quickly. They are thicker and will need to cook a bit slower.) Let it warm up and then “paint” it with butter.
Scoop batter onto your griddle. I like to use ¼ cup to scoop my batter! If I want smaller pancakes I do one scoop, larger pancakes I do two!

It’s no secret that when pancakes are ready to flip they are bubbly on top. Ice cream pancakes sometimes don’t bubble. If you think they might be ready to flip but don’t see any bubbles check the underside.
Repeat until all pancakes are made.
Top with whipped cream, ice cream or syrup and enjoy!

Personally, I like these pancakes best with just butter. They are so flavorful they don’t need any toppings! And if for some reason you have leftovers of these delicious pancakes, store them in an airtight container in your refrigerator. You can stick them in the toaster for a quick and crunchy treat on your way out the door on busy mornings!

Put them on a cute little serving tray with coffee and you’ve got the perfect breakfast in bed!
