Let’s Bake! 5 Bread & Muffin Recipes to Try During Quarantine

You guys. This post is getting up late for one reason, and one reason alone. Outer Banks. Have you seen in?!! I binged the entire season yesterday and today and it’s so good! Go check it out (on Netflix!) I promise you’ll love it if you loved shows like Pretty Little Liars, The OC and National Treasure! (Weird combo. I know.)

Alright! Let’s make this short and sweet 🙂 I know you aren’t hear to read paragraphs upon paragraphs about where I found these recipes! One thing I’ve been doing during Quarantine is baking… a lot. So today, I thought I’d share my 5 favorite Bread & Muffin Recipes so you can bake them too!

First off… let’s start with the Quarantine Classic, Banana Bread!

Banana Bread

I shared my easy Banana Bread recipe over on Instagram last weekend! But just in case you didn’t catch it, here’s what you’ll need!

  • 3 Mashed Bananas
  • 3/4 Cup Sugar
  • 3/4 Cup Vegetable Oil
  • 2 Eggs
  • 2 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Vanila
  • 1/2 Cup Chocolate Chips! (Optional, of course! Or any other mix-ins you might like!)

Combine bananas, sugar, vegetable oil and eggs in a large bowl. Mix until combined. Next, add in flour, baking soda, baking powder, salt, vanilla and chocolate chips. (I like to use the mini ones!) Stir together until completely combined. Bake in a slightly greased loaf pan at 350 for 40-60 minutes! So easy, and so yummy!

Grandma Edmondson’s White Bread

My Grandma makes the BEST bread, and today, you’re getting her recipe! Here is what you’ll need. (PS… this makes A LOT of bread.)

  • 1 Stick Butter
  • 1 Can PET Milk
  • 1/2 Cup Sugar
  • 2 Tablespoons Satl
  • 3 Packages Yeast
  • 4 Cups Water (+1/2 Cup of Warm Water)
  • 14 Cups Flour

Start by mixing yeast with 1/2 cup warm water. Set aside. Then, heat up your milk and butter. Be sure not to bring it to a boil! Once combined, set it aside to cool. In a large bowl, mix sugar and salt. Next, mix in you warm milk mixture. As you stir, the salt and sugar should dissolve. Once dissolved, add yeast and 4 cups of water. Stir until combined. Now, add in your flour! Once combined, turn out on floured counter. Knead in enough flour until your fingers are clean! Once kneaded, put back into a clean, oiled bowl. Cover with a towel until doubled in size. Then, put in greased pans, and let them rise covered. Bake your loaves at 350 for 30 minutes, or until done! If you make this recipe… you can freeze your bread! And trust me, you’ll have bread for WEEKS.

Apple Muffins

These muffins are a breakfast staple at our house! We originally found this recipe on Mix and Match Mama forever ago. However, we’ve made it so many times, we know it by heart! Here is what you’ll need.

  • 1 Cup Sugar
  • 3/4 Cup Vegetable Oil
  • 2 Eggs
  • 1 Cup Flour
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 2 Tablespoons Cinnamon
  • 2 Cups Grated Apple (I usually use Gala but any will be fine!)

In a mixing bowl, beat sugar, eggs and vegetable oil with an electric mixer. Set aside. In a different bowl, combine flour, salt, baking soda and cinnamon with a whisk. Slowly beat the flour mixture into the egg mixture. Then, stir in your grated apple. Line a muffin tin with cupcake liners and divide your batter up evenly. Bake at 350 for about 15 minutes, or until a toothpick inserted in the middle comes out clean! This recipe makes 12 muffins… and we usually eat them all within two days. They are are THAT good!

Blueberry Muffins

My Dad makes the BEST blueberry muffins… next to Starbucks 🙂 Check out his recipe. I promise, you will love them too! Here is what you’ll need!

For the Muffins:

  • 1 1/2 Cups Flour
  • 3/4 Cup Sugar
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 1/3 Cup Vegetable Oil
  • 1 Egg
  • 1/3 Cup Milk
  • 1 Cup Blueberries

For the Toppings:

  • 1/2 Cup Sugar
  • 1/3 Cup Flour
  • 1/4 Cup Butter, Cubed
  • 1 1/2 Teaspoons Cinnamon

Start by greasing muffin tins and set aside. In a mixing bowl, combine flour, sugar, salt, and baking powder. Then, mix in your egg, milk and vegetable oil. Fold in blueberries. Set to the side. Now, it’s time to make the topping! Mix together sugar, flour, butter and cinnamon with a fork. It will be crumbly! Now, pour your batter into your muffin tins, and sprinkle with your crumb topping! Bake at 400 degrees for 20-25 minutes. Enjoy!

Anddddd because I like to eat dessert for breakfast…

Chocolate Chunk Muffins

Like I said. Does it get better than dessert for breakfast?! Here is what you’ll need!

  • 2 1/4 Cup Flour
  • 1 1/4 Cup Sugar
  • 1/2 Cup Cocoa Powder
  • 1 Tablespoon Baking Powder
  • 3/4 Teaspoon Salt
  • 2 Eggs
  • 1 Cup Buttermilk
  • 3/4 Cup Vegetable Oil
  • 1 Teaspoon Vanilla
  • 1 Cup Chocolate Chips (or chocolate chunks!)

In a large mixing bowl, whisk eggs, buttermilk, oil and vanilla until combined. Add in your dry ingredients. (Flour, sugar, cocoa powder, baking powder, and salt) Stir until combined. Finally fold in your chocolate chips. Line muffin tins with cupcake liners and fill with batter. Bake at 350 for 20 minutes, or until a toothpick inserted in the middle comes out clean! Best served with a cup of cold milk 🙂
